Zucchini Snacks

I am always trying to find healthy snacks for Myron and I and I had the idea for this a couple of weeks and I just kept working on it and today I was finally pretty happy with the results. This little gadget is really a LOT of fun. A friend loaned it to me for a few days and I have been buying zucchini and spiraling away !!! It is called a veggie spiral cutter. There are three different cutting blade sizes. I have used ALL of them!! The first one seemed perfect until I dehydrated them... They started out about the size of curly fries and ended up about the size of "sprouts" !!!!! :O(
Last night I tried the next size.... STILL too small. Today I tried this one and as you can see from the last few pictures they are still pretty small, but I decided to "pile" the spirals up and that really did work pretty well.


After cutting them I tossed them with some olive oil and herbs.


Looking forward to having a lot of zucchini in my garden this year so I can stay ahead of Myron's snacking with these :O)

I'll have to say, they look yummy. I have never tried dried zucchini before.

Mmm... Looks good :) I tried that not long ago and they ended up tiny and overly greasy. I'll use giant zucchinis next time, to have more regular sized chips, and very little olive oil :)
