Today's Lunch

Today for lunch I tried another recipe I found on Pinterest.
I LOVE that site! I have found so many great ideas and recipes on there.

Chicken Crescent Roll Casserole


Chicken Crescent Roll Casserole

2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls
1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted
3/4 cup grated cheddar cheese or swiss cheese (or any cheese of choice)
1/2 cup milk

Filling
4 ounces cream cheese (very soft) * I used 1/3 less fat cream cheese*
2 tablespoons butter (very soft but not melted)
1/2-1 teaspoon garlic powder
1 tsp minced onion flakes
2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey)
1/2-3/4 cup finely grated cheddar cheese
1/2 tsp seasoning salt
1/2 tsp ground black pepper (or to taste)
2 Tbsp. milk
1-2 cup grated cheddar cheese (for topping)

Set oven to 350°F. Spray a 9x13 dish with cooking spray. Mix together milk, 3/4 cup cheese and undiluted chicken soup (can season with black pepper if desired).

For the filling --- (make certain that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder. Add in the chopped chicken, onion and cheddar cheese; mix well until combined. Add in 2 tablespoons milk; mix to combine (add in a little more if the mixture seems too dry). Season with seasoned salt or white and black pepper to taste. Unroll the crescent rolls. Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end. Drizzle a small amount of soup mixture on the bottom of the dish. Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.
Drizzle the remaining sauce on top (you don't have to use the full amount of cream sauce, just use as much as desired) and sprinkle with 1 cup (or more) grated cheese, or amount desired. Bake for about 30 minutes.

Recording Choir CD

Yesterday evening and this afternoon we have had the privilege of having Faith Music Missions come and record a choir CD for us. It was a lot of hard work but a LOT of fun too.

Bro David Chamberlain was our piano player as well as helped with decision making. He has an AMAZING ear for music!

Brock's Basketball Game

Today I got to watch my oldest grandson play jr. high basketball. I was so proud to see him play so well. He is quite the "shooter"! He made over 20 points for his team and did great getting the ball away from the other team. It is going to be fun as all the boys get to the age where they will be playing. This grandma is going to be busy in a few yrs!! Ryan starts next year and then before long Reed will be coming along too. Here is just one of Brock's lay-ups, from today.

Valentine Banquet

Valentine's Day evening I had a DATE ! We went to our church Valentine banquet held at the lodge at Lake Darling State Park.

The Church With A HEART

Last Sunday was our "Valentine Sunday" at church. Many hours were put in to make this
GINORMOUS Heart for our bus kids ( and our own church kiddos too!)
There were 360 full sized candy bars on the heart....
Such doesn't look like that many, right?!?! That shows just how BIG the heart really was !
The acrostic is just PERFECT!
Sunday morning there was a LOT of help pinning the candy bars on...

It's always a joy to see all the children from all the ministries
file through..... They just keep coming and coming
It brings tears to my eyes to see all the children we are reaching.
Thank you, Lord for our Faithful bus workers!!

My Three Grandsons

Today I got a very special treat! All three of my grandsons in one place !! We don't get to see much of Brock ( 12 yrs) so it's always fun when Ryan (11) and Reed (8) get to see their cousin.
We didn't spend a lot of time with him and his mother but we had such a good time.
